New Potato and Olive Oil Mash
This is a rough mash of new potatoes with their skins, rather than smooth and creamy, this mash has texture and flavour.

Ingredients
- 800g-1kg new potatoes
- 180ml extra virgin olive oil
- maldon salt
Method
- Mash: Place the potatoes in a saucepan of boiling water and simmer for 10-15 minutes (dependant on their size) until tender, remove from the heat and drain. Add the olive oil to the pan and mash the potatoes with a potato masher or fork. Add the olive oil, mix until well incorporated and season to taste.
