Nouc Cham
Nouc Cham is a vietnamese dipping sauce that is easy to prepare and tasty. it is used as we would use salt or tomato sauce.
Portions: 120ml of Dipping Sauce
Ingredients
Dipping Sauce
- 100ml water
- 2 tsp caster sugar
- 1 red chilli, finely chopped
- 2 garlic cloves, finely chopped
- juice of 1/2 a lemon
- 1 tsp rice wine vinegar or white wine vinegar
- 2 tbsp fish sauce
Method
- Palce the water in a saucepan with the sugar and bring it to the boil and leave it to simmer until the sugar is dissolved. Remove it from the heat and alow it to cool.
- Place the chilli and garlic in a mortar pestle and grind it to a paste add the sugar water, fish sauce and lime and mix it together until well combined.
- Serve the sauce in small dipping sauce bowls garnished with or without your choice of garnish (corriander, peanuts or carrot).
